Small town thrives on local economy. When a new business opens on Main Street, USA, it is a win. When the meat is sourced locally, processed within sixty miles of our community, it is well worth the investment to trying out new. Add a coffee shop to it and what more could you ask for?
Main Street Market in Syracuse, Kansas is owned by Tierney and Hannah DeWitt. The couple met five years ago at the Windbreak while taking Joy Bezona’s swing dancing classes, and life is moving fast for them.
They married less than a year ago and have a baby due at the end of March. Last fall, they purchased the building where Western Shelter Insurance was on Main Street and immediately began remodeling. On the first of January they became registered wholesalers for meat – currently beef, pork, and lamb. They either grow it or source it locally. Their brand is Walking M Land & Cattle.
Tierney added, “It was my great-grandfather’s brand, Millard Finlay, a Hamilton County farmer and rancher, and my grandfather, Larry, used the brand until the early 2000s. After my grandfather’s passing, my mom continued to register it even when they stopped having cattle for a while, saving it to keep it in the family.”
Tierney was looking to diversify their cattle operation.
He said, “I think people like having locally sourced meat readily available. We have had some hesitant to try our products but once they tasted it, they have returned for more. Our cattle is fed corn and finished at the Winner Circle feedlot.”
Tierney points out that they don’t carry grass fed beef. “Not everyone understands that grass fed beef has a lot of Omega 3s that give it a fishier taste.”
Stop into Main Street Market where the hometown vibe and rustic finishes offer a warm, cozy atmosphere. There are freezers and refrigerators with meat and cheese, everything from ribeyes to flank steak for carne asada. The cheese they currently have for sale is sourced from a small Kansas dairy in Durham, north of Wichita.
They process their meats at Heritage Meats in Leoti and Wiley Processing in Wiley, Colorado, both who are USDA inspected.
They hope people will be patient. “We are experimenting with different cuts of meat, cheeses, figuring out what sells, what cuts people want, and what doesn’t work. We currently have a large inventory of beef and pork. We are limited on lamb as we source quality lamb. We source high quality animals. Pigs are put on a strict diet. While pigs will eat anything, we keep them on a soybean meal and cracked corn pellet. We hope to have goat soon as well.”
The store is now open with limited hours to purchase meat and cheese. Soon, Hannah’s side of the business will open, a coffee shop with specialty Brazilian roastcoffee, hot and cold drinks like lattes, frappes, and more with cow’s milk, almond, and oat milk options. The coffee inspection should be complete within the week and hope pastries will be added soon.
They have plans. They hope to begin catering and hosting events. In fact, February 21 they will host a Galentine’s event with local vendors. Assuming demand, their future plans include owning their own feedlot and processing the meat themselves.
Once the coffee shop is open, their hours will be 6:30 AM – 2:00 PM and 4:00 -6:00 PM. Their landline is coming soon. As their focus becomes more in-person sales, the website will need adjustments.
